Organic Banana Pancakes

On this rainy Sunday in Arizona, nothing sounded better than Banana Pancakes and a lazy day with my husband and bulldog…  and I think I just may have made the most incredible pancakes ever! They are naturally sweet with the banana and honey, super soft, fluffy and filling… Like I said, perfect for a much yearned for lazy day 🙂

Ingredients

(serves 3.. 2 if you are super hungry)

3/4 Cup Organic Whole Wheat Flour

1 teaspoon Baking Powder

1/2 teaspoon Organic Cinnamon

1/4 teaspoon Sea Salt

3/4 Cup Organic Coconut Milk (you may also use regular milk)

1 Medium Organic Banana

1 Organic Egg

3 Tablespoons Honey

3 Tablespoons Organic Butter, melted

1/4 teaspoon Vanilla Extract

Directions

To make it simple…In one bowl, combine the dry ingredients. In another bowl combine the wet ingredients and mash the banana into the same bowl. Then mix all ingredients together! Heat your griddle or pan with a small amount of butter and pour the desired size of batter. (wait to flip until you see those cute little bubbles form)

Serve with sliced banana, maple syrup and more butter!! YES more butter 😉

Chocolate Doughnuts with Powdered Sugar

After making these delectable Chocolate Doughnuts I was waiting for my husband to get home from work. So I was watching “The BEST thing I ever ate,” on my favorite show Food Network (of course). Shortly after the show was over my husband got home, and I gave him a doughnut I had made… his eyes then rolled back and after a few minutes he yelled, “This is the best doughnut I’ve ever had! The best thing I’ve ever eaten!” I just had to giggle because I was just previously watching that fun show. So anyways, here is what could be one of the BEST things you ever eat as well!

Ingredients

1 1/4 cups  whole wheat flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking powder

1/4 teaspoon sea salt

2 large organic eggs

3/4 cups sugar

2 tablespoons buttermilk

1 1/2 tablespoons butter, melted

2-4 cups canola oil  for frying

1/2 cup powdered sugar to coat

Directions

1. In a bowl combine the flour, cocoa powder, baking powder and sea salt then whisk together well.

2. In another bowl stir together the sugar, melted butter, eggs and buttermilk. Then, add the mixture to the dry ingredients and mix well.

3. Prepare a brown paper bag by filling it with the powdered sugar.

4. Heat the oil to about 375 degrees F.

5. Using an ice cream scoop, drop dollops of doughnut batter into the hot oil. Only a few at a time. Do not over crowd the pot. Fry for about 2 minutes on each side or until the doughnuts are browned and crispy.

6. Take the doughnuts out and immediately put into the paper bag and shake to coat each doughnut.

Serve right away!

Organic Fruit and Berry Tart

This beautiful fruit tart is a perfect summer time dessert.  The rich Lemon Curd and beautiful berries makes this tart absolutely perfect.

Ingredients

Fresh Lemon Curd

Tart

4 Tablespoons Butter

1/4 Cup Raw Sugar

1 Organic Egg

1 Cup Whole Wheat Flour

pinch of Sea Salt

1/4 Cup Berries of choice

Dark Chocolate

Directions

In a medium bowl combine together the flour, sea salt, sugar then whisk. Add in the butter 1 Tablespoon at a time and work it with your hands, then add in the egg and mix well. If the mixture is too dry and is not coming together add in 1 Tablespoon of water. Form the dough ball then wrap in plastic wrap and chill in the refrigerator for at least 30 min.

When ready to bake the pastry crust, preheat the oven to 350 degrees F. Whether using 4 mini tart pans or one large one, press the dough to the bottom of the pan to form your tart. Place the tart pans on a baking sheet and bake for 15-20 minutes or until golden brown. If you choose to add the Dark Chocolate, pull the tarts out of the oven the last 2 minutes and place some chocolate on each tart and allow it melt in the oven for the remaining time needed to bake.

When the tarts are cooled you are ready to assemble the lemon curd then your beautiful berries. Chill in the refrigerator.

Fried Donut Holes with Cinnamon and Powdered Sugar

Donuts… I LOVE them! Crispy, dense, oily goodness is the kind that I crave, and who knew donuts were so simple to make? I was inspired to make these beautiful little babies because of my love or my obsession with the donuts from CAFE BINK in Carefree Arizona. Their donuts are so good that I have almost a daily craving for them. Therefore to satisfy my craving I had to create my own…

Ingredients

2 cups Whole Wheat Four

1/2 cup Sugar

1 teaspoon Sea Salt

1 Tablespoon Baking Powder

1/4-1/2 teaspoon Cinnamon

2 Tablespoons Olive Oil or Butter

1/2 cup Half and Half

1 Egg

Grape seed Oil

Directions

In a medium bowl combine the flour, sugar, salt, baking powder and cinnamon then whisk together. To the flour mixture add in the oil or butter, half and half and beaten egg. Stir together till well combined. Form into a ball and cover with plastic wrap and refrigerate until ready to fry.

Prepare to fry, roll out the dough into about a half inch thickness and cut out ‘holes’ with a round cutter, then set aside.

To fry, heat Grape Seed Oil in a deep pot until temperature reaches about 365 degrees F. Set the holes, only a few at a time into the oil and fry about 2 minutes on each side or until golden brown. Take out the holes and drain on a wire rack or a paper towel.

Garnish with powdered sugar

Chocolate Buttermilk Waffles with a Gift from our Garden

This Valentines Day we were blessed to find two Beautifully ripen Strawberries right from our very own garden! Since we consider every day, a day to celebrate and cherish each other, we decided it was a fun excuse to have Chocolate for breakfast accompanied by a lovely Gift from our Garden…

Chocolate Buttermilk Waffles

1 3/4 Cups Organic Flour

1/4 Cup Cocoa Powder

3 Tablespoons Organic Sugar

1 teaspoon Organic Molasses

1 teaspoon Baking Soda

1 teaspoon Baking Powder

1/2 teaspoon Pink Himalayan Salt

2 Organic Eggs, Large

2 Cups Buttermilk

1/2 Cup Organic Butter, Melted

Directions

Melt the butter on low-med heat in a skillet and set aside. Combine the flour, cocoa powder, salt, baking soda and baking powder, then whisk or sift together. In a different bowl combine the buttermilk, eggs, cooled melted butter, sugar and molasses and mix well. Then combine the wet ingredients to the dry ingredients and stir till combined. (Remember ‘Lumps are lovely’)

Put about 1/2-3/4 cups of batter into your waffle iron at a time.

Serve warm with chocolate chips, maple syrup and strawberries (In our case one Strawberry each).

Minneola Muffins with Dates and Goat Cheese

Minneolas are delicious with sweet dates and creamy goat cheese. These muffins are sweet and savory, perfect for breakfast or a mid day snack.

Ingredients

2 Cups Organic Flour

2/3 Cup Organic Sugar

2 teaspoons Baking Powder

1/2 teaspoon Baking Soda

1/2 teaspoon Sea Salt

1/4 Cup Organic Olive Oil

Zest of one Minneola or Orange

2/3 Cup Buttermilk

2 Organic Eggs

2 Tablespoons Minneloa Juice, Fresh

1 Cup Dates, Chopped

8-10 oz Goat Cheese

Directions

Preheat the oven to 400 degrees F.

Combine the flour, sea salt, baking powder, baking soda, the zest from a Minneola or an Orange and dates. Whisk until combined. In another bowl combine the eggs, sugar, olive oil, buttermilk, juice and sugar. Stir well and add the mixture to the dry ingredients, stir both mixtures together and be sure to not over mix them. Butter a muffin pan and put a scoop full of the batter into each muffin cup and top with a few tablespoons of goat cheese on each. Bake for 20 minutes an allow to cool for about 10 minutes before removing from the pan.

2 teaspoons Active Dry Yeast

1 1/3 Cup Warm Filtered Water (110 degrees f)

1 Tablespoons Organic Olive Oil

2 Tablespoons Local Honey

1 Cup Organic Bread Flour

2 Cups Organic Whole Wheat Flour

1 1/4 teaspoons Sea Salt

1/2 Cup Dried Cranberries

1/3 Cup Sunflower Seeds

Directions

Combine the yeast, warm water and honey. Mix together softly with your fingers only for a few seconds to incorporate the mixture. Allow it to sit for a few minutes, giving you time to gather the rest of your ingredients. When the yeast mixture looks frothy, you may begin to add in the olive oil, flour, sea salt, cranberries and sunflower seeds. Then use a wooden spoon to stir the mixture together, then use your hands to knead the dough ONLY for a few minutes until the dough looks like a soft lovely dough ball. Leave the ball in the bowl and cover with plastic wrap or a moist towel and allow to rise 1-2 hours, until it has double in size.

Once doubled in size, shape it into a lightly oiled loaf dish then cover again and allow to rise above the top by an inch or two. Once it has risen again, place it in a preheated 350 degree oven for 35-40 minutes until the bread is browned.

Basil and Matcha Green Tea Muffins

Believe it or not these muffins are just as Delicious as they are Unique. Combining the flavors of bitter green tea with sweet basil is surprisingly amazing! I have had the idea of this recipe in my head for days! These flavors seem so unique and I adore them both in their own ways, so why not combine them? I am always looking for something completely different to introduce to myself and to others that are seeking new flavor combinations. Well I believe that I have definitely found one! I hope you see this new creation as a wonderful experience as I have. Don’t worry! I will admit that I was quite hesitant to try these at first… However, I am so glad that I did.

Ingredients:

2 C Organic All Purpose Flour

1 C scant, Organic Evaporated Cane Juice

1/2 t Baking Soda

1/2 t Pink Himalayan Sea Salt

2 T Matcha Green Tea powder

1/2 C Organic Milk or Cream

1/2 C Basil infused Olive Oil, cold pressed

2 Organic Eggs

Directions:

Preheat the oven to 350 degrees F. Combine the flour, cane juice, baking soda, sea salt and Matcha powder then mix it together with a whisk. In a separate bowl, combine the milk or cream with the basil olive oil and the eggs. Lightly wisk them together. Then combine the two mixtures together, slowly incorporating them… Do not over mix. The mixture will be a glossy green color, so beautiful!

Bake for 18-22 minutes. Test the muffins with a toothpick after 18 minutes, if it comes out clean they are done! Allow to cool before introducing this new creation to your palate.

These cookie bars are agreeably MAGIC… 6 ingredients and you have one of the best treats yet discovered! The original recipe has been around since the 1960’s by Eagle Brand, I simply added some Haley Love to it…

Ingredients:

2 C Homemade Graham Crackers, Made into crumbs

1/2 C + 2 T Organic Sweet Cream Butter, Melted

14 oz Organic Sweetened Condensed Milk

2 C Semi Sweet Chocolate Chips

1 1/4 C Coconut, Shredded

1 C Walnuts, Chopped

Directions:

Preheat the oven to  350 degrees F

Combine the Graham Crackers with the melted butter then press at the bottom of a 13×9 inch baking pan, lined with parchment paper. Then layer half of your chocolate chips, then the coconut, then the walnuts and top with the rest of the chocolate chips. Complete the MAGIC with the organic condensed milk and put it in the oven and bake for 25-28 minutes until the edges and top are golden brown…

Now that is what I call MAGIC!!

Organic Granola

Wholesome organic granola.. no need to buy cereal when you can make your own! Easy, nutritious and oh so delicious.

Ingredients:

4 c organic rolled oats

1/2 c chopped raw almonds

1/2 c raw pecans

1/2 c raw walnuts

1/2 c organic raisins

1/2 c local honey

2 T organic coconut oil

2 t ground cinnamon

pinch of sea salt

Directions:

Oven 315 degrees

Combine all ingredients except the coconut oil.

Melt the coconut oil, then add to the mixture.

Put the lovely goodness on a baking sheet and bake for about 30-35 min.. Every 12 minutes or so pull out and stir to ensure all gets nice and crunchy.

After it is finished and cooled enjoy with some fresh organic milk or make a yogurt parfait.
