Messy Sweet Potato Fries with Honey Macadamia Nut Glaze

Your hands will surely be messy after indulging in these delicious Sweet Potato Fries, combined with this Honey Macadamia Nut Glaze, your ‘Sweet, Salty and Crunchy’ cravings will be ultimately satisfied.

Ingredients for the Fries

2 Organic Sweet Potatoes or Yams

2 Tablespoons Organic Extra Virgin Olive Oil

1-1  1/2 teaspoons coarse Sea Salt

Pepper

Glaze

1/4 Cup Local Honey

1 Tablespoon Mayonaise

1 Tablespoon Macadamia Nuts, chopped

Directions

Rinse the potatoes well then pat dry with a towel. Slice them into thin ‘French Fry’ slices. Toss them with the olive oil, sea salt and a pinch a fresh ground pepper. Place them on a baking sheet and bake them in a preheated 400 degree F oven for 25-30 minutes, flipping them every 10 minutes. (Watch them carefully, sweet potatoes contain a lot of sugar and can burn easily.)

For the Glaze, combine the honey, mayonnaise and chopped macadamia buts and whisk together until the glaze has been emulsified.

Top the hot sweet potato fries with the gorgeous glaze and a pinch more of sea salt and pepper.

Enjoy these gorgeous fries to accompany any Burger or just by themselves as a delicious snack

Organic Peanut Butter and Chocolate Chunk Cookies


A delightfully comforting combination.. Peanut Butter and Chocolate with a dash of Sea Salt.

Ingredients

1 1/4 Cup Organic Flour

1 stick Organic Sweet Cream Butter

3/4 Cup Organic Sugar

1 1/2 teaspoons Organic Molasses

1/2 Cup Organic Peanut Butter, chunky

1 Organic Egg

3/4 Cup Chocolate, chopped (You may also use chocolate chips)

1 teaspoon Vanilla Extract

1/2 teaspoon Baking Soda

1 teaspoon Sea Salt, coarse (Reserve 1/2 teaspoon for sprinkling on top of the cookies before baking)

Directions

Combine together the butter, sugar and molasses and cream together. Then add  the peanut butter, vanilla and egg. Stir together till well combined. Add the flour, chocolate chunks, baking soda and 1/2 teaspoon of the sea salt.

Preheat the oven to 375 degrees F

Sprinkle the remaining sea salt on the cookies before baking then bake for 8-10 minutes until golden brown

Try squishing some Vanilla Bean ice cream in between two of these gorgeous cookies.. Talk about comforting!


Chocolate Macadamia Cookies with Sel Gris

Sweet Chocolate, Buttery Macadamia Nuts and Salty Sel Gris

In my opinion, Cookies fit into the food categories of: Comfort, Snack, Dessert, Hormonally Craved, Just Because and Can I have more please?

Since I believe Cookies fit into so many different categories, I must get creative with the combination of flavor, texture and overall goodness for each one! So for this particular recipe I came up with, I think you should decide which category they fit into.

Ingredients:

2 C Organic Whole Wheat Flour

1 1/2 C Organic Evaporated Cane Juice

1 1/2 Sticks, Organic Sweet Cream Butter

1 1/2 C Semi Sweet Chocolate Chips

3/4 C Macadamia Nuts, Chopped

2 Organic Eggs

2 Tablespoons Extra Virgin Olive Oil

1 Tablespoon Organic Molasses

3 Heaping Tablespoons Cocoa Powder (non-dutch pressed)

1 teaspoon Baking Soda

1 1/2  teaspoon Sel Gris

Directions:

Cream the butter and sugar together, then add in the Molasses, Olive Oil and lightly beat in the eggs one at a time until the mixture is well combined.

In another bowl combine the Flour, Chocolate Chips, Macadamia Nuts, Baking Soda and 1 teaspoon of the Sel Gris, whisk till combined.

Combined the wet mixture with the dry and stir together well, unlike Muffin Batter, you should not see any dry ingredients.

When you are ready to bake, preheat your oven to 375 degrees

Arrange cookies a few inched apart from each other and top with the remainder Sel Gris a top each cookie and bake for 10 minutes.

Sit down with a cookie, cappuccino and enjoy!

Homemade Graham Crackers

The crunch of a Graham Cracker takes me back to summer time campfires, when I would intentionally set my marshmallow on fire so it would be burnt to the crisp! Smush it between to heavenly Graham Crackers and I was set!… Until I was ready for “S’more!” 😉 If you are not making S’mores and you are having a gathering, you can easily go a little more gourmet and add these to your festive fondue. Or simply satisfy that old fashion Graham Cracker Craving.

Ingredients

1 1/2 cups Organic Whole Wheat Flour

3/4 cup Organic All Purpose Flour

1/2 cup scant Organic Evaporated Cane Juice

1 T Organic Molasses

1 t Baking Powder (Aluminum Free)

1/2 t Baking Soda

1/2 t fine Sea Salt

1/2 – 1 t Cinnamon

1 stick Organic Sweet Cream Butter

4 T Local Honey

1/4 cup Cold Water

1 t Vanilla Extract

Directions

Combine first the dry ingredients, mix well using a whisk. Then add in all of the wet ingredients. Continue mixing until you can form a dough ball. Then place the ball between 2 pieces of parchment paper and roll out into a disk, not too thin. Chill for approximately 30-45 minutes in the refrigerator. After it has been chilled, roll out the dough to the approximate thickness that you want your crackers to be.

Preheat the oven to 350 degrees F.

Cut the dough into about 2 inch rectangles or circles cut out with a cookie cutter. Place on your baking sheet and with a fork press holes in the dough. Bake for 18-22 minutes depending how thin or thick your dough is.

When they are ready they will be gorgeously golden brown.

Organic Granola

Wholesome organic granola.. no need to buy cereal when you can make your own! Easy, nutritious and oh so delicious.

Ingredients:

4 c organic rolled oats

1/2 c chopped raw almonds

1/2 c raw pecans

1/2 c raw walnuts

1/2 c organic raisins

1/2 c local honey

2 T organic coconut oil

2 t ground cinnamon

pinch of sea salt

Directions:

Oven 315 degrees

Combine all ingredients except the coconut oil.

Melt the coconut oil, then add to the mixture.

Put the lovely goodness on a baking sheet and bake for about 30-35 min.. Every 12 minutes or so pull out and stir to ensure all gets nice and crunchy.

After it is finished and cooled enjoy with some fresh organic milk or make a yogurt parfait.
