Chocolate Chip Shortbread

One of my favorite treats ever… Chocolate Chip Shortbread. In this new recipe I used semolina flour instead of arrowroot starch and it creates the perfect texture. Just wait.. you’ll see what I mean!

Ingredients

6oz Organic Salted Butter

2 Cups Organic AP Flour

1/3 Cup Semolina Flour

1/4 teaspoon Himalayan Sea Salt

1/4 Cup + 2 Tablespoons Organic Sugar

1/4 teaspoon Vanilla Beans or Vanilla Extract

1/4 cup 60% Bittersweet Chocolate Chips

Directions

Preheat the oven to 325 degrees F. Line a cake or tart pan with parchment and butter the bottom. Combine the butter and sugar in a bowl and cream together, then add the vanilla. Mix well. In another bowl, combine the remaining ingredients and whisk together. Combine the dry ingredients with the butter mixture and press in the bottom of the prepared pan. Press the chocolate chips on the top on the shortbread. Bake for 40-45 minutes until golden brown.

Cool completely and store in an airtight container.

Just remember… There are nutrients in butter, so there should be NO guilt here 😉

Chocolate Chip Cookie Dough Cupcakes

 

These are the absolute most incredible cupcakes I have ever tasted! If you LOVE cookie dough you will go crazy over these little cakes. I will admit this is not my recipe.. I followed this Chocolate Chip Cookie Dough Cupcake recipe. The only thing I changed was the ingredients I used were organic and I used less frosting.

Flourless Peanut Butter Chocolate Chip Cookies

Another simple peanut butter chocolate recipe… This time flourless and of course incredible!!

Ingredients

1 Cup Organic Peanut Butter (Smooth or Crunchy)

1/2 Cup Raw Sugar

1 Organic Egg

1/2 teaspoon Baking Soda

1/4 teaspoon Sea Salt

Directions

Preheat the oven to 350 degrees F. Combine all ingredients in a bowl and mix well. Measure out cookies and place on a buttered baking sheet, 2 inches apart. Bake for 10-12 minutes. Allow to cool on the baking sheet for 5 minutes then transfer to a cooling rack. These cookies are crumbly so they make fall apart and melt in your mouth!

Chocolate, Graham Cracker and Marshmallow Muffins

My original objective for this muffin was a simple chocolate.. To say the least, my plans changed. As I had Graham Crackers baking  in the oven the aroma of cinnamon filled the room, I then thought “Oo I will add some of the crackers to my chocolate muffins! Good idea, but why not add the fluffy white balls of goodness that are starring at me through my pantry door!!” So yes.. They suddenly became Chocolate, Graham Cracker and Marshmallow Muffins and may I say..

these are -NAUGHTY deliciousness-

Ingredients

5 Tablespoons organic butter, melted

2 1/4 cup organic flour

6 Tablespoons unsweetened cocoa powder

3 teaspoons baking powder

1/4 teaspoon sea salt

1/2 cup sugar

2/3 cup semi sweet chocolate chips

12 marshmallow, cut into thirds

1/4 cup homemade graham crackers

1 organic egg

1 1/4 cups organic milk

Directions

1. Preheat the oven to 375 degrees F. Place 12 muffin papers in a muffin pan. Melt the butter

2. In a medium bowl whisk together the flour, cocoa, baking powder, sea salt and sugar.

3. In another bowl combine the egg, milk and melted butter. Stir in the flour mixture, add the chocolate chips and fold gently until all combined.

4. To assemble to muffins sprinkle 1 teaspoon at the bottom of each muffin paper then 1 of the marshmallow thirds then some muffin batter, continue the pattern until each muffins has 3 marshmallow pieces.

Bake for 22 minutes.

Oatmeal Chocolate Chip and Cinnamon Cookies

My husband has declared this to be his  favorite cookie of the moment… Oatmeal Chocolate Chip and Cinnamon. Wholesome and delicious!

Ingredients

1 stick organic butter

3/4 cup sugar

1 teaspoon molasses

1 teaspoon vanilla

1 egg

1 cup oats

3/4 cup whole wheat or all purpose flour

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon sea salt

3/4 cup chooclate chips

Directions

1. In a medium bowl cream together the butter, sugar and molasses. Then add in the vanilla and egg. Stir together till mixed well.

2. In another bowl whisk together the flour, sea salt, baking powder, oats, cinnamon and chocolate chips.

3. Combine the butter mixture with the flour and mix well.

4. Preheat your oven to 350 degrees F and drop spoon fulls of cookie dough onto a buttered baking sheet and bake for 12 minutes.

Simply GORGEOUS!

Chocolate Buttermilk Waffles with a Gift from our Garden

This Valentines Day we were blessed to find two Beautifully ripen Strawberries right from our very own garden! Since we consider every day, a day to celebrate and cherish each other, we decided it was a fun excuse to have Chocolate for breakfast accompanied by a lovely Gift from our Garden…

Chocolate Buttermilk Waffles

1 3/4 Cups Organic Flour

1/4 Cup Cocoa Powder

3 Tablespoons Organic Sugar

1 teaspoon Organic Molasses

1 teaspoon Baking Soda

1 teaspoon Baking Powder

1/2 teaspoon Pink Himalayan Salt

2 Organic Eggs, Large

2 Cups Buttermilk

1/2 Cup Organic Butter, Melted

Directions

Melt the butter on low-med heat in a skillet and set aside. Combine the flour, cocoa powder, salt, baking soda and baking powder, then whisk or sift together. In a different bowl combine the buttermilk, eggs, cooled melted butter, sugar and molasses and mix well. Then combine the wet ingredients to the dry ingredients and stir till combined. (Remember ‘Lumps are lovely’)

Put about 1/2-3/4 cups of batter into your waffle iron at a time.

Serve warm with chocolate chips, maple syrup and strawberries (In our case one Strawberry each).

Almond Truffle Bark with Lemon and Smoked Flake Sea Salt

The other day I experienced a complete “Julie and Julia” moment, when I was gifted two unique culinary items from a kind and dear women. The gifts were two different flavors of Flake Sea Salts; Lemon and Smoked. I was contemplating what to do with these ingredients, and I knew it had to be a something special… Therefore, there is nothing more special to me than of course, CHOCOLATE. So, a crunch from Almonds, melt in your mouth chocolate combined with these amazingly delicious smokey and citrus salts…

I have for you one word for you: SEXY

Ingredients

1/2 Cup Almonds, Toasted

1/2 Cup Semi Sweet Chocolate Chips

1 Tablespoon Organic Butter, Unsalted

1/2-1 teaspoon of each Flake Sea Salt

Directions

First toast the almonds in a pan for about 4 minutes on medium heat. As soon as they begin to brown and you can smell them, they are done and set aside. In another pan melt together the chocolate chips and butter. Prepare a piece of parchment paper by placing it on a baking pan. Place the almonds on the paper, and pour the melted chocolate over the almonds and lastly put the Lemon Salt on half of the almond chocolate bark and the Smoked Salt on the other half. Place in the fridge to cool for at least 2 hours. When you are ready to enjoy, break the truffles into pieces and enjoy each elegant bite.

Cinnamon Cayenne and Coffee Brownies

With these gorgeous brownies you will experience the taste sensations of, Beautiful sweet Cinnamon with bitter Coffee Beans and finishing with the residual  warming effect of Cayenne Pepper. Each bite of these luscious Chocolaty brownies will take you on a journey of sensations!

Ingredients

7 Tablespoons Organic Sweet Cream Butter

3/4 Cup Semi Sweet Chocolate Chips

3/4 Cups Organic Sugar

1 Tablespoon Organic Molasses

3 Organic Eggs

1/2 Cup Organic All Purpose Flour

2 Tablespoon Cocoa Powder

1/4 Cup Chocolate Chips (Folded in the batter last)

1 teaspoon Cayenne Pepper

1 teaspoon Coffee Beans, fresh ground

1 teaspoon Cinnamon

Directions

Begin this brownie adventure by preheating the oven to 350 degrees F and melting the butter and chocolate chips together, stove top. Once melted, remove from heat and stir in the sugar molasses until well combined. Then add in the eggs, one at a time. In a

mixing bowl, combine the flour, cocoa powder, cinnamon, ground coffee and cayenne pepper, whisk or shift the ingredients.

Once completed you may add the wet batter to

the dry mixture and fold delicately. Add in the 1/4 cup chocolate chips to the brownie batter. Pour this lovely batter into a buttered 9×9″ baking dish and bake the brownies for 30 minutes.

To compliment the heat sensation, these brownies pair beautifully with rich creamy ice cream or gelato!

Organic Peanut Butter and Chocolate Chunk Cookies


A delightfully comforting combination.. Peanut Butter and Chocolate with a dash of Sea Salt.

Ingredients

1 1/4 Cup Organic Flour

1 stick Organic Sweet Cream Butter

3/4 Cup Organic Sugar

1 1/2 teaspoons Organic Molasses

1/2 Cup Organic Peanut Butter, chunky

1 Organic Egg

3/4 Cup Chocolate, chopped (You may also use chocolate chips)

1 teaspoon Vanilla Extract

1/2 teaspoon Baking Soda

1 teaspoon Sea Salt, coarse (Reserve 1/2 teaspoon for sprinkling on top of the cookies before baking)

Directions

Combine together the butter, sugar and molasses and cream together. Then add  the peanut butter, vanilla and egg. Stir together till well combined. Add the flour, chocolate chunks, baking soda and 1/2 teaspoon of the sea salt.

Preheat the oven to 375 degrees F

Sprinkle the remaining sea salt on the cookies before baking then bake for 8-10 minutes until golden brown

Try squishing some Vanilla Bean ice cream in between two of these gorgeous cookies.. Talk about comforting!


Haley’s Homemade Hot Cocoa

Who doesn’t fancy a cup of Cocoa during the chilly winter days?

Whenever I make this Homemade Hot Cocoa recipe I always think of one of my favorite movies, ‘Chocolat.’ A favorite part of mine is when Vianne is pouring her gorgeous homemade hot cocoa into an old fashioned french style cup and she tops it off with a pinch of Chili Pepper.

Haley’s Homemade Hot Cocoa

2 Cups Organic Whole Milk

1/2 Cup 70% Dark Chocolate, Chopped

1/2 Cup Semi Sweet Chocolate Chips

1/2 t Chili Pepper

In a pot, heat the milk on the stove on medium high then add in the chocolate, chili and stir till thick and gorgeous.

Serve warm or cold for an amazing chocolate treat!
