Broccoli and Goat Cheese Pizza with Caramelized Onions and Salami

After eating at “Pizzeria Biancos” last night, I was absolutely CRAVING Pizza again today! I truly do not understand how I possibly could considering how much I ate. Between 6 people, 6 pizzas were completely devoured! Oh Man was it GOOD!! So today I created another delicious pizza of my own…

Whole Wheat and Honey Pizza Dough

3/4 Cup Filtered Water (110 degrees F)

2 1/2 teaspoons Dry Active Yeast

2 Cups Organic Whole Wheat Flour

1 Tablespoon Local Honey

1 teaspoon Sea Salt

3 Tablespoons Organic Olive Oil

Combine the water, yeast and honey together. After about 5 minuted the mixture will look frothy. Then add in the olive oil. In another bowl combine the flour and sea salt and whisk together. Then combine both mixtures together and mix well with a wooden spoon and your hands. Place into a bowl in a warm area and allow dough to rise. After 45 minutes, punch down and wrap in plastic wrap and place in the refrigerator until ready to use.

Topping

1/2 Cup Organic Broccoli, Sliced

3/4 Cup Goat Cheese

1/2 Cup Caramelized Onions

1/4 Cup Salami, Sliced

1 Tablespoon Olive Oil

Pinch of Sea Salt & Pepper

Begin to layer the Pizza Dough- Onions, Broccoli, Goat Cheese, Salami, Olive Oil, Sea Salt and Pepper

Bake in a preheated 500 degree F oven for 12-15 minutes until the the cheese is melted and the crust is golden brown.

This pizza pairs gorgeously with a Pinot Noir, Candlelight, Frank Sinatra and The Love of Your Life

Cinnamon Cayenne and Coffee Brownies

With these gorgeous brownies you will experience the taste sensations of, Beautiful sweet Cinnamon with bitter Coffee Beans and finishing with the residual  warming effect of Cayenne Pepper. Each bite of these luscious Chocolaty brownies will take you on a journey of sensations!

Ingredients

7 Tablespoons Organic Sweet Cream Butter

3/4 Cup Semi Sweet Chocolate Chips

3/4 Cups Organic Sugar

1 Tablespoon Organic Molasses

3 Organic Eggs

1/2 Cup Organic All Purpose Flour

2 Tablespoon Cocoa Powder

1/4 Cup Chocolate Chips (Folded in the batter last)

1 teaspoon Cayenne Pepper

1 teaspoon Coffee Beans, fresh ground

1 teaspoon Cinnamon

Directions

Begin this brownie adventure by preheating the oven to 350 degrees F and melting the butter and chocolate chips together, stove top. Once melted, remove from heat and stir in the sugar molasses until well combined. Then add in the eggs, one at a time. In a

mixing bowl, combine the flour, cocoa powder, cinnamon, ground coffee and cayenne pepper, whisk or shift the ingredients.

Once completed you may add the wet batter to

the dry mixture and fold delicately. Add in the 1/4 cup chocolate chips to the brownie batter. Pour this lovely batter into a buttered 9×9″ baking dish and bake the brownies for 30 minutes.

To compliment the heat sensation, these brownies pair beautifully with rich creamy ice cream or gelato!

Messy Sweet Potato Fries with Honey Macadamia Nut Glaze

Your hands will surely be messy after indulging in these delicious Sweet Potato Fries, combined with this Honey Macadamia Nut Glaze, your ‘Sweet, Salty and Crunchy’ cravings will be ultimately satisfied.

Ingredients for the Fries

2 Organic Sweet Potatoes or Yams

2 Tablespoons Organic Extra Virgin Olive Oil

1-1  1/2 teaspoons coarse Sea Salt

Pepper

Glaze

1/4 Cup Local Honey

1 Tablespoon Mayonaise

1 Tablespoon Macadamia Nuts, chopped

Directions

Rinse the potatoes well then pat dry with a towel. Slice them into thin ‘French Fry’ slices. Toss them with the olive oil, sea salt and a pinch a fresh ground pepper. Place them on a baking sheet and bake them in a preheated 400 degree F oven for 25-30 minutes, flipping them every 10 minutes. (Watch them carefully, sweet potatoes contain a lot of sugar and can burn easily.)

For the Glaze, combine the honey, mayonnaise and chopped macadamia buts and whisk together until the glaze has been emulsified.

Top the hot sweet potato fries with the gorgeous glaze and a pinch more of sea salt and pepper.

Enjoy these gorgeous fries to accompany any Burger or just by themselves as a delicious snack

Organic Peanut Butter and Chocolate Chunk Cookies


A delightfully comforting combination.. Peanut Butter and Chocolate with a dash of Sea Salt.

Ingredients

1 1/4 Cup Organic Flour

1 stick Organic Sweet Cream Butter

3/4 Cup Organic Sugar

1 1/2 teaspoons Organic Molasses

1/2 Cup Organic Peanut Butter, chunky

1 Organic Egg

3/4 Cup Chocolate, chopped (You may also use chocolate chips)

1 teaspoon Vanilla Extract

1/2 teaspoon Baking Soda

1 teaspoon Sea Salt, coarse (Reserve 1/2 teaspoon for sprinkling on top of the cookies before baking)

Directions

Combine together the butter, sugar and molasses and cream together. Then add  the peanut butter, vanilla and egg. Stir together till well combined. Add the flour, chocolate chunks, baking soda and 1/2 teaspoon of the sea salt.

Preheat the oven to 375 degrees F

Sprinkle the remaining sea salt on the cookies before baking then bake for 8-10 minutes until golden brown

Try squishing some Vanilla Bean ice cream in between two of these gorgeous cookies.. Talk about comforting!


Sauteed Mushroom Ravioli with Manchego Thyme and Pepper Cream


If I could rename “Ravioli” I would call it “Pocket Full of Goodness!” Because that it truly what it is. Not only is ravioli so much fun to make, but you get to choose what goes inside!

For this particular ‘Packet Full of Goodness’ recipe, I chose to fill them with gorgeous sauteed mushrooms, a thin slice of Manchego Cheese and tossed them in a delicious cream sauce.

Dough

1 1/2 Cups Organic Flour

3 Organic Eggs

1 teaspoon Sea Salt

1 teaspoon fresh Thyme

Directions

Combine the flour, eggs, salt and thyme. Using your hands or a wooden spoon mix until well incorporated. Roll out the dough using a pasta machine until the sheets are very thin. Set aside on parchment paper to prevent the sheets from sticking. When your filling is done and cooled cut your sheets of pasta into 3″ x 3″ pieces. To put together the ravioli layer 2 mushrooms then a piece of the Manchego then 1 mushroom on top. Complete as many ravioli as you would like to serve then set aside on parchment paper dusted with a little flour to again, prevent sticking.

Filling

1 Cup Crimini Mushrooms, chopped

2 Tablespoons Organic Sweet Cream Butter

Manchego Cheese, thinly sliced into 1” pieces

Sea Salt and Pepper

Directions

In a large pan saute the butter, mushrooms, salt and pepper over low-medium heat until the mushroom are wilted and beautiful. Then set aside in a bowl to cool for about 15 minutes.

Cream Sauce

1 Cup Organic Cream

1/3 Cup Manchego Cheese

1/2 teaspoon Black Pepper, fresh cracked

Few sprigs of Thyme

Directions

In a small pot heat the cream and Manchego until it is melted. Add in the sea salt, pepper and Thyme. Stir with a whisk to

prevent to much clumping. (A little clumping is good because it gives it that cheesy texture.)

To cook the ravioli, bring a large pot of sea salted water to a soft boil and add in your ravioli one at a time. Do not overcrowd the pot. Cook until tender 8-10 minutes. (All dough has a different cook time, so just test the ravioli to make sure it is to the consistency you would like.)

When your ravioli is ready to be served, top with the gorgeous cream sauce and garnish with a pinch more of pepper and fresh Thyme.

Cocoa Cayenne Cake


Dark Chocolate and Cayenne Pepper…

Not only an intense combination for the palate, but also an Aphrodisiac known by the Aztecs since 700 BC. This gorgeous cake will make you desire these flavors more and more.

Ingredients

1 1/2 sticks Organic Sweet Cream Butter

3 oz Dark Chocolate (80% or higher), chopped

1 Cup scant Organic Sugar

1 Cup Hot Filtered Water

1 Cup Organic Flour

1/2 teaspoon Non-Aluminum Baking Powder

2 Tablespoons Cocoa Powder (Non-Alkalized)

1 teaspoon Cayenne Pepper, ground

1/2 teaspoon Sea Salt

1 Large Organic Egg, beaten

Directions

Combine the butter, chocolate, sugar and hot water in a pan over low heat until the chocolate melts. Stir until smooth then transfer to a large bowl, and allow to cool for about 15 minutes. Mix in the flour, baking powder, cocoa powder, cayenne pepper and sea salt into the mixture then add in the egg.

Butter a round cake pan and preheat the oven to 325 degrees F

Pour the cake batter in the pan and bake for 45 minutes, or until it has risen and is firm to the touch. Allow to cool in the cake pan for about 30 minutes.

Enjoy with a Cappuccino or a scoop of Vanilla Bean Gelato!

Olive Oil and Pink Salt Chilled Cream


If you love the fruity flavor of Olive Oil and you crave the ‘Sweet and Salty’ tastes, you will adore this recipe. I choose to serve this Chilled Cream as a last course with a beautiful Port dessert wine.

Olive Oil and Pink Salt Cream

2 Cups Organic Half and Half

1/2 Cup Organic Sugar

1/4 Cup Organic fruity Olive Oil

2 Organic Egg Yolks

1/2-1 teaspoon Pink Himalayan Salt

Directions

Combine the sugar, salt and egg yolks. Then whisk them together for about 4 minutes until the mixture is well incorporated. Slowly add in the olive oil and half and half and stir until the mixture its glossy and creamy looking.

You may simply put it in the freezer in a sealed container or put it in an ice cream maker. When it is at the consistency you like, Bon Appetit!

2 teaspoons Active Dry Yeast

1 1/3 Cup Warm Filtered Water (110 degrees f)

1 Tablespoons Organic Olive Oil

2 Tablespoons Local Honey

1 Cup Organic Bread Flour

2 Cups Organic Whole Wheat Flour

1 1/4 teaspoons Sea Salt

1/2 Cup Dried Cranberries

1/3 Cup Sunflower Seeds

Directions

Combine the yeast, warm water and honey. Mix together softly with your fingers only for a few seconds to incorporate the mixture. Allow it to sit for a few minutes, giving you time to gather the rest of your ingredients. When the yeast mixture looks frothy, you may begin to add in the olive oil, flour, sea salt, cranberries and sunflower seeds. Then use a wooden spoon to stir the mixture together, then use your hands to knead the dough ONLY for a few minutes until the dough looks like a soft lovely dough ball. Leave the ball in the bowl and cover with plastic wrap or a moist towel and allow to rise 1-2 hours, until it has double in size.

Once doubled in size, shape it into a lightly oiled loaf dish then cover again and allow to rise above the top by an inch or two. Once it has risen again, place it in a preheated 350 degree oven for 35-40 minutes until the bread is browned.

Haley’s Homemade Hot Cocoa

Who doesn’t fancy a cup of Cocoa during the chilly winter days?

Whenever I make this Homemade Hot Cocoa recipe I always think of one of my favorite movies, ‘Chocolat.’ A favorite part of mine is when Vianne is pouring her gorgeous homemade hot cocoa into an old fashioned french style cup and she tops it off with a pinch of Chili Pepper.

Haley’s Homemade Hot Cocoa

2 Cups Organic Whole Milk

1/2 Cup 70% Dark Chocolate, Chopped

1/2 Cup Semi Sweet Chocolate Chips

1/2 t Chili Pepper

In a pot, heat the milk on the stove on medium high then add in the chocolate, chili and stir till thick and gorgeous.

Serve warm or cold for an amazing chocolate treat!

Date and Goat Cheese Tarts with Oyster Mushrooms and Pistachios

There is something about the combination of Dates and Goat Cheese that I just adore. The sweet with the tang and creaminess, it just works together.

This gorgeous recipe combines these flavors along with crunchy Pistachios and earthy Oyster Mushrooms all laying upon buttery Puff Pastry.

Ingredients:

1 Sheet of Puff Pastry

1 Organic Egg

1/2-3/4 Cup Organic or Local Goat Cheese

1/3 Cup Oyster Mushrooms, wiped clean with a dish towel, then chopped

6-8 Dates, Chopped into pieces

Handful of Pistachios

Sea Salt and Pepper

Chives

Directions:

Preheat the oven to 400 degress

Cut a pre rolled 9 x 9 sheet of Puff Pastry in to 6 pieces. Brush with egg wash and lay the pieces on a parchment paper covered baking sheet.

Chop the chives and sprinkle on the puff pastry. Then combine the Goat Cheese, Mushrooms, Egg, Salt and Pepper and put a few tablespoons of the mixture onto each of the pieces of pastry. Then a layer of chopped pistachios, dates and pistachios again.

Bake for 15-16 minutes until the edges of the pastry is puffed and golden brown.

Serve warm with a beautiful salad and a glass of wine
